The prison tower marks the 'tip' of the coat-of-arms-shaped old town layout. Built in the mid-14th century, it was used as a prison tower from 1890 to 1935, primarily for hop pickers who had committed crimes. The inmates were then transported to Roth prison. Since 1979, the tower has housed a small museum of the Spalt Local History Association with its so-called “Heimatstuben” (local history rooms). Here you can admire interesting rarities from the town's history, above all evidence of Spalt's hop-growing culture.

The old Spalt town hall was built in 1524 by Prince-Bishop Gabriel von Eyb, whose coat of arms still adorns the staircase today. The ground floor served as a market hall for a long time and later as a police station. In 1753, an apartment was built for the local court clerk. The building has been owned by the town of Spalt since 1816, and for almost 120 years—until 1933—it was home to the mayor and town administration. After that, the imposing building was used as a fire station, and now houses a small firefighting museum. To this day, on election Sundays, the bell hanging in the small ridge turret rings several times to call the citizens to the polls.

The upper gate tower was built in 1422 under Prince-Bishop Johann II von Heideck and has been habitable since 1763. Since 1821, it has been owned by the town of Spalt, which renovated it in 1974. Today, the tower is used as a museum with “craftsmen's workshops.” Here you can see how shoemakers, carpenters, barbers, and pewterers used to work.

The HopfenBierGut museum in the Kornhaus conveys the town's history as a history of enjoyment: visitors can experience the world of hop growing and brewing in Spalt interactively and with all their senses – from a three-dimensional town map to a panoramic cinema and a walk-in brewing kettle to a modern ‘Tischlein-deck-dich’ (The Wishing Table). Feel, smell, observe, taste is the motto, because at the end of the tour, visitors can taste the surprising variety of flavours of Spalt beers at the ProBierBar.
Imaginatively designed and carefully integrated into the half-timbered architecture of the former tithe barn, which is over 550 years old, the presentation received the Bavarian Museum Award in 2017.
